I must confess, I’m not a big fan of pumpkin. Gasp! Shameful, I know. Tis the season for pumpkin everything too. I don’t want to be a party pooper though and I do like pumpkin bread and the occasional pumpkin cake. It’s probably all of the sugar added, ha! Anyway, I came across this Whole Wheat Pumpkin Bread recipe a few years back and it’s really good! A healthier for you pumpkin bread? Yes please! And my girls love this pumpkin bread too. It’s a win-win! Baking is really relaxing for me. It is good for my soul! Since being done with chemo I’ve been trying to do more things that I really enjoy. There’s just something soothing about mixing a whole bunch of ingredients together and having it turn into something delicious.
