Instant Pot Carnitas {Recipe}

Instant Pot Carnitas-

Wow!  So good!

If you like carnitas, you need this recipe in your life!  We’ve been having another heat wave here again-it’s supposed to be 102 degrees today, ugh!  I guess Southern California missed the memo about it being October.  But since it has been so hot, it’s the perfect reason to try another recipe in the Instant Pot.  I love that the Instant Pot doesn’t heat up the whole house and I don’t have to run it all day like the Crock Pot.  We were having some people over for dinner too so what’s easier than tacos?  I think I secretly wish I was a chef, ha ha!  I most definitely am not, but I do like trying new recipes and I like sharing the ones with you that our family really enjoys.  I decided to try this Instant Pot Pork Carnitas recipe from Cooking with Curls and it did not disappoint!

First you just add some orange juice, lime juice, crushed garlic and a bay leaf to your Instant Pot:

I was nervous that the orange juice would make the carnitas too citrusy, but it didn’t at all!

Then you season chunks of pork and throw them right in too:

Set your Instant Pot to Manual for 50 minutes:

Don’t forget that it does take 10-15 minutes to get to full pressure before it starts counting down & then you have to wait about 20 minutes after it’s done for it to naturally release the pressure.

But, when it’s all done-

Carnitas!

We actually skipped the last step of crisping up the meat.  I guess that’s the more authentic way to eat carnitas, but we just shredded it all up & made our tacos.  They were SO good!

Carnitas tacos are pretty basic too-just use corn tortillas and add some onion, cilantro, salsa (we like Herdez Salsa Verde) and sour cream.  We used avocado too because we put avocado on just about everything.  We also served it with some rice and beans.
